Easier Than Pie Lemon Hand Pies

One huge downfall of being engaged to a teacher is that you will get sick..A LOT! I have gotten the stomach bug, flu, and just survived a terrible sinus infection! I was really hoping to work on some blog posts, but unfortunately that did not happen.

Fortunately, Monday is PI Day (you know 3.14...). The fiance reminded me that not only does it mark one month of being engaged, it also marks a whole day of eating PIE! We bought a frozen cherry pie to enjoy on this glorious day, but I wanted to make something else..

My fiance is obsessed with those sugary little fruit pies that are 500 calories a piece! Every time we go to Food Lion, he scopes them out only to come up short and disappointed. I would prefer if he didn't fill his body with the sugary, high calorie snack, but if you can't stop him- make a slightly healthier version.

We had some cleaning to do, so I didn't want to commit to making homemade pie crust, so I bought  a refrigerated crust (although you could totally make your own). This is seriously the easiest recipe ever and we both loved these little hand pies. Now on to the recipe..

Easier Than Pie Lemon Hand Pies
You will need..

  • refrigerated pie crust (I bought Pilsbury- it came with 2 rolled crusts)
  • 1 can lemon pie filling
  • water
  • 1/4 cup powdered sugar
  • 2 TBSP milk
Start by preheating your oven to 450 degrees. Unroll your pie crusts and layer on top of one another. Cut the crust into 9 sections. You will have 18 pieces- one top piece and one bottom piece. Separate the two pieces and fill the center will pie filling (I used about a tablespoon and a half in each pie). Dip your finger in some water and trace the edge of the bottom crust. Layer the other piece of crust on top and pinch the edges with a fork. I used the same fork to poke holes in each pie (to prevent the pies from exploding). Place on a cookie sheet and bake for 8-10 minutes. 

Now to make the glaze! Mix the powdered sugar and milk until glaze is formed. You can add more milk as needed to get the perfect consistency. Remove pies from oven and allow to cool slightly. Use a spoon to cover each pie in glaze. The glaze will harden once dry. I refrigerated the pies for about an hour before eating, but you could totally eat them warm. 

And VOILA! These super easy pies are ready to be devoured. ENJOY!

I am a twenty-something living in Virginia just trying to adult. 


I got engaged to my long-time boyfriend/ best friend on Valentine's Day, so be prepared for a thousand wedding posts and bling pics (like the lovely one above!). I am also obsessed with cooking, crafting, and reading- so this blog is going to be a lot of organized chaos to say the least.
